On this day I tried to emulate the fact that I will be running a leg about every 10 – 12 hours. In the morning, at 5:45 am, I did 4.49 miles on the treadmill at the gym. In the evening, at 5:50 pm after work, I did 2.6 miles on the street. I’ll need to do this a couple more times during my training.

This is my first training once selected for the Caring Eagles Red Team. I started with, and continue to use, the treadmill before work.

Derek’s Pasta Salad

Ingredients:

Tri-colored spiral pasta
Medley of cherry tomatoes – halved
Green bell pepper – diced
Red onion – diced
English cucumber – cut in half slices
Sliced black olives
Jar of hot yellow chili peppers
Medium cheddar cheese – cubed
Peppered salami – quarter slices
Salad seasoning
Ground black pepper
Sea salt
Zesty Italian dressing

Prep:

Add un-cooked pasta to pot of salted boiling water. Cook until al-dente, rinse under cold water and drain.

In a bowl combine prepped tomatoes, bell pepper, red onion, cucumber and olives. Open jar of chili peppers and drain juice over mixture in bowl. Mix and chill in fridge for 30 mins. After 30 mins drain juice from mix.

In a large bowl, add pasta, mixture of veg., salami, cheese, salad seasoning and italian dressing. Toss together.

Add salt and pepper to taste. Add Hot chili peppers to garish. Chill salad.

Frontier Pie

This twist on a shepherds pie uses ground bison for a leaner protein and jalapeno for a little kick.

Ingredients:

  • 1 can crescent biscuits
  • 1 egg white
  • 1 lb ground bison
  • 1/4 cup diced bell pepper
  • 1/4 cup diced onion
  • Jalapeno (you decide on how much)
  • 6 oz sliced mushrooms
  • 1 pkg frozen corn
  • 1 pkg frozen green beans
  •  12 oz jar home style gravy (savory)
  • 1 pkg instant potatoes (cheese or garlic)

Steps

Doing the prep work the night before and assembling the final product the next day makes for a better pie.

Prep ahead of time

  1. Lightly spray 9 x 13 pan with non-stick cooking spray
  2. Line with crescent biscuits sheet
  3. Brush with egg white, this hardens the biscuit to give a nice bottom crust
  4. Bake following instructions on the package, until golden brown
  5. When done, remove from pan and let cool on cooling rack
  6. In skillet, saute onions to translucent
  7. Add bison and peppers
  8. When bison is browned, drain and set aside
  9. When cooled, place in airtight container and place in refrigerator over night

Assembly

  • Preheat over to 350 degrees
  1. Place bottom crust in 9 x 13 pan
  2. Layer sliced mushrooms over crust
  3. Spoon meat mixture over mushrooms
  4. Spoon gravy over all
  5. Layer corn and green beans over mixture*
  6. Prepare instant mashed potatoes per instructions
  7. Spoon and smooth potatoes over top 
  8. Bake uncovered 30 – 45 minutes

* For better results, defrost the corn and green beans before adding.

Pool Party Punch

Ingredients:

  • 4 cups Apple Juice
  • 4 cups Cranberry Juice
  • 1 – 16 oz can frozen Orange Juice
  • 2 cups Pineapple Juice
  • 3/4 cups Coconut Syrup
  • 3/4 cups Almond Syrup
  • 1 cup Lemon Juice
  • 48 oz sparkling water

Mix all items together in order. Place in punch bowl (or upright beverage dispenser), add ice and enjoy.
